White Chocolate, Pecan & Caramel Fudge


I spent a lazy Sunday afternoon making this easy fudge recipe with Meg, a good friend of mine. 

I have to say, this fudge recipe is the quickest, most easiest recipe you'll ever come across - it didn't even feel like we were making fudge! Its definitely a recipe to try with young children. 

This creamy fudge is filled with pecans and swirled with caramel. It is very rich and feels as if you are eating your entire allowance of calories in one sitting!

Ingredients:

Fudge:

- 525g white chocolate chips

-  1 Tin sweetened condensed milk

-  60g butter

- 1/2 teaspoon vanilla extract

- 125g chopped pecans

- 165g caramel sauce

Method:

1) Line a brownie tin with parchment paper. Combine the chocolate chips, condensed milk and butter  in a medium sized glass bowl. Heat the mixture in the microwave for 90 seconds. Stir to combine and heat for a further 15 seconds. Stir and heat for a final 15 seconds, only if needed. 

2)  Stir until mostly smooth with just a few flecks of unmelted chocolate. Add in the vanilla extract and pecans and stir to combine. 

3)  Scoop onto the parchment lined tray and spread with a spatula to approximately 1-inch thickness. 

4) Drizzle the caramel sauce over. You may have to heat the caramel in the microwave very briefly to make it more 'drizzly'. Lightly swirl the caramel into the fidge with a knife.

5) Chill until ready to serve (around 1 hour)
